How to Cook STUFFED CHICKEN LUWOMBO in Uganda

Stuffed Chicken Luwombo Recipe


  • Chicken- 1 whole chicken

  • Onions- 1 big

  • Tomatoes-2

  • Garlic- 4 cloves

  • Chicken Masala- 1 table Spoon

  • Cot mill -1 spring

  • Royco – 1 table Spoon

  • Salt and pepper to taste

  • Cooking oil – 1 table spoon



The Stuffing for Chicken Luwombo



  • Onion – 1 big

  • Tomatoes - 2

  • Green peper – 1 big

  • Carrots – 2

  • Irish potatoes – 2 potatoes

  • Boiled rice – 200g

  • Boiled spaghetti – 200g

  • Royco – 1 tbsp

  • Cooking oil – 2 tbsp

  • Stock cube – 1

  • Egg plant – 2 optional



How to prepare Chicken Luwombo stuffing (The procedure)


Wash vegetables, cut into small pieces
Peel, grate the carrots and Irish potatoes or chop into small pieces or cut into small cubes
Boil the rice/spaghetti
Heat oil and add garlic and onions when ready
Add egg plants if needed
Stir well and cover, cook for some time then add the tomatoes…… Stir well cover and cook until tomatoes are soft
Add all the remaining ingredients , stir well until all is thoroughly mixed
Remove and use

How to prepare your chicken for stuffing



Pre-roast it whole using charcoal/firewood (
Peel and chop finely onions, garlic, cot mill then crush or pond in a motor with salt or chicken masala spice, royco spice, pepper thoroughly
Mix it with oil to make a marinate
Marinate the chicken or smear the mixture inside the chicken and outside it and let it stand for some time like 10 – 15 mins.
Stuff the chicken with the prepared stuffing then wrap it in the Luwombo leaf ie put the stuffing inside the cavity/stomach of the chicken, then wrap chicken in the Luwombo leaf.
Steam the Luwombo in a prepared steaming pan.

Cooking TIP


Place banana stocks in the pan, cover with a banana leaf, pour in hot water, then place the Luwombo and cover it well with banana leaves to prevent escape of steam.
Steam for 1 hour
Serve when hot and traditionally in a basket (ekibbo)
