How to Cook Meat Stew in Uganda - Modern Method One (1)
- 500 gm meat/ beef
- 25gm/1 tea spoon dripping/cooking oil
- 1 big onion
- 2 cloves of garlic
- 1 carrot
- 2 big Tomatoes
- 1 small Irish potato (Optional)
- 25 gm/1 table spoon wheat flour
- 300 ml stock/ water
- ½ green pepper
- 1 spring coat-meal
- 1 teaspoon meat masala (Optional)
- 1 tea spoon curry powder (Optional)
- 2 seasoning /Stock cubes
- 1 tea spoon Royco
Tenderize the meat if tough by beating it to bruise the fibres or add tenderizer example Pawpaw sap e.t.c.
Clean the meat by washing it if necessary,cut off the gristle, excess fat e.t,c.
Cut meat into small mouthful pieces
Wash vegetables, chop onions,green pepper,garlic and carrot.
Blanch tomatoes and cut into small pieces.
Heat oil until it gives off a haze then fry the meat rapidly to seal juices in.
Remove the meat
Fry onions until they are soft and give off a good flavor. Lower the heat.
Add the flour and fry until cooked and slightly cream.
Add other spices and tomatoes while stirring vigorously.
Put off the sauce-pan from the heat source, add some stock /water stirring vigorously until it mixes well without lumps, then pour in the rest of the stock.
Put back on fire until it starts boiling.
Add the meat and the rest of the vegetables,correct the seasoning to have a good taste.
Simmer while covered until cooked and tender.
Add salt to taste
