Roast/Smoke goat meat as for beef.Cut meat in mouthful piecesBlanch tomatoes and chopCut Onions, green pepper,carrots into relatively big pieces.Lay Luwombo leaf in a basket (ekibbo)Mix thoroughly all the cut ingredients plus salt, royco, cotmill, garlic and stock cube. Place half of the meat in the leaf, put half of the mixed ingredients, top it with the remaining meat and finally add remaining mixture.Pour in some little water/stock just to reach the level of meat or half way the meat.Cove with a small piece of luwombo leaf,then wrap the leaf neatly then fasten /tie with a small banana fibre firmly.Place in a prepared steaming Saucepan and cover with banana leaves carefully to conserve the steam. Then put to steam on a sauce of fire /heat.Steam for between 1 to 1 1/2hrsServe hot placed in a busket.
